Electric Freestanding Cooking Range Commercial Kitchen Equipment


As we have introduced our gas flooring cooking range the other day, we are going to talk about the electric freestanding commercial restaurant equipment today. I will compare and list the pro & cons of each range power by gas or electricity.

1.    Product range
Both electric and gas freestanding restaurant range share same cooking equipment: fryer, griddle, pasta cooker, lava rock grill. The only different equipment is stove, if it’s power by gas, then it’s call stove range, normally 4 open fire burner with cabinet or oven; if it’s power by electricity, then it is named induction cooker, generating heat by electricity passing through high electrical resistivity material.

2.    Power method

Gas Cooking Range:
a.    Pros: gas & fire is believed to be the best way of heating, especially in Asia. We Asian like cuisine to be steaming hot whiling serving and with a special burning aura, and fire is the secret to this slightly burning smell. So in domestic market and South East Asia market, people usually purchase gas cooking range for we are really attached to food cook by fire.
b.   Cons: restaurant gas cooking range need more safety devices to be installed in the equipment, to proper prevent accident caused by fire. All of our gas cooking equipment is equipped with gas detective device, pressure sensor, alarm device according to national standard regulation.

Electric Cooking Range:
a.    Pros: electric restaurant range is liked by western clients, because it generates less smoke during cooking and more fit in in western style commercial kitchen. You don’t need to access gas inlet outlet to the range, only connect it with the 380Vac wire in your kitchen is ok.
b.   Cons: the heating process, however, is less satisfied than the gas range. Electric cooking range is heat up by heating element, which is “U” shape heating tube lying under the griddle plate or tank, so the heating effect is largely depend on the quality of element. And poor quality heating element can cause uneven oil temperature, heat up slowly etc.  
 In the end, it’s based on your restaurant’s real situation to choose a suitable cooking equipment. Both electric & gas cooking range got merits.
