Deep Fat Fried Chicken Fillet & French Fries For World Cup Food

Prepare the hot food for blooming business during world cup. Deep fried chicken sided with French fries dish will definitely be the second hottest, if not the first, food for your restaurant business. Do you have any recipe about deep fat chicken to share with us? Here is my recipe of frying chicken in large quantity especially easy for commercial restaurant cooking.

1.    De-frozen the chicken fillet
Just wait till nature take its course and de-frozen the chicken fillet to about -2°C. In the meanwhile, we can use meat pounder pounding the fillet for easy seasoning.

2.    Seasoning
Mix the fillet with black pepper, salt, and your secret flavor ingredients, put them in the vacuum rotatory seasoning machine and start rotating. Clockwise 20 mins then counter-clockwise 20 mins.

After the rotary mixing, pack every 10 fillet per plastic food bag, labelled with packing time & date, for 12 hours, under temperature 0°C-4°C. During this time the meat can fully absorb the seasoning source and become juicy & tasty in every bite.

3.    Starching & bread crumble
When you start to prepare the first batch of deep fried chicken fillet, starching is the last step before frying. Take the bags of fillet from cool storage room according to packing time, the first one that put in cool storage room should be the first one to take out. Place the fillet on the starching machine and cover starch evenly for 3 minutes. Roll the chicken fillet in the bread crumble bowl, press several times and dust the extra crumble.

4.    Deep fry
Set the electric fryer to 185°C, deep fry the fillet for about 25 seconds. Frying time should based on the thickness of the fillet and the condition of your frying machine, we could experiment to find out the best frying time for your chicken.
