Home-Made Eggette Hong Kong Style

Eggette, aka egg puff, is the No.1 Hong Kong hot street snack, you could see small food stores selling eggette from traditional original flavor, to new style matcha, strawberry, chocolate flavor. Believe it or not, delicious as eggette is, its not difficult to make, you could do it at home as long as you got an electric eggette maker.

Ingredient:
Flour 140 g
Corn powder 20 g
Soda powder 4g
Egg fluid 100g
Water 50g
Milk 60g
Sugar 60g
Corn oil 60g

Step:
1. Mix up egg fluid and sugar until color turns white and volume puffed.
2. Put in milk, corn oil and water mix together until smooth
3. Sieving flour, soda powder, corn powder into the dough and keep mixing again until there is no small hard article in it.
4. Pre-heat the eggette maker, cover oil on the surface of both plates sides for easy de-mold later.
5. Pour the eggette dough into the maker mold and turn it upside down from time to time until eggette is crispy brown.

For home made eggette, we could choose healthy ingredient and have a proper control of oil, sugar portion, also we could add on additional ingredient such as chocolate, berry jam, matcha to create different flavor.

For people who sell eggette, we got two sizes of eggette maker, one with single heating plate and the other with double heating plate. You could choose one based on your daily serving number. I would suggest that buying two single head eggette maker if possible, because the machines could take turns to rest. And for those already in the eggette making business, you must ask one very practical question, is it easy to clean?
